Instructions: Brown the meat with taco seasoning per package directions. Set out all toppings buffet-style in separate bowls. Let each person build their own salad or bowl with meat, beans and whatever toppings they like.

Instructions: Preheat oven to 425°F (220°C). Toss vegetables with olive oil, cumin and chili powder, spread on a sheet pan, and roast 18–20 minutes until tender and lightly charred. Warm tortillas, fill with roasted veggies and cheese, and top with sauce.

One-Pan Chicken and Veggie Orzo Bake

A single baking dish handles the protein, pasta and vegetables together, which keeps both cooking and cleanup simple.

Ingredients: 1.5 lbs chicken thighs, 1.5 cups orzo, 3 cups chicken broth, 2 cups cherry tomatoes (halved), 1 cup spinach, ½ cup grated parmesan, 1 tbsp olive oil, salt and pepper

Instructions: Preheat oven to 400°F (200°C). Season chicken and sear in olive oil until browned, then set aside. In the same oven-safe pan, combine orzo, broth and cherry tomatoes. Nestle the chicken on top and bake, uncovered, for 20–25 minutes until orzo is tender and chicken is cooked through. Stir in spinach and parmesan before serving.

Ingredients: 1 lb ground beef, small flour tortillas, shredded cheese, shredded lettuce, diced pickles, burger sauce (mayo, ketchup, a bit of relish), salt and pepper

Instructions: Divide beef into 4 balls. Heat a skillet over high heat, place a tortilla on top of a beef ball, then smash flat with a spatula through the tortilla. Cook 2–3 minutes, flip (tortilla-side up), top with cheese to melt, then fold in half like a taco. Add lettuce, pickles and burger sauce before serving.

Breakfast for Dinner: Veggie Scramble & Pancakes

On the nights nothing else sounds good, breakfast food is a reliable crowd-pleaser that comes together fast and works at any age.

Ingredients: 6 eggs, ½ cup diced bell peppers, ¼ cup diced onion, ½ cup shredded cheese, 1 cup pancake mix, milk and egg per package directions, butter for the pan

Instructions: Sauté peppers and onion in a bit of butter until softened. Whisk eggs, pour into the pan, and scramble with the vegetables until just set, then stir in cheese. Separately, mix pancake batter per package directions and cook on a griddle until golden on both sides. Serve scrambled eggs alongside pancakes.
